That sourness underneath the crisp

Backyard Buffalo chutneys, carrot pickle and raita on ice

Two things about dosa nobody says enough.

One, it's gluten-free and vegan and nobody had to do anything to make it that way. No swapped-in flours, no substitutes, no engineering. Rice and lentils. That's it, that's the whole list.

Two, it's fermented. Which isn't a health thing, it's just how you make it — but it does mean it's easier on your stomach, and it's where the flavor lives. That little sourness under the crisp? That's the ferment. Can't fake it, can't rush it.

Take a container of batter home — that's really the whole point of selling it. It sits in your fridge and then it's Wednesday and nobody wants to cook and dinner's eight minutes away. No app, no styrofoam box. Something clean that you actually made.
